Steamed rice cakes sure gave me a headache when I made them during CNY. The shapes was one thing, since I didn't have any proper moulds or cups. The paper cups used are far too fragile to hold the batter firm when it rises. Texture was another issue cause the water somehow flooded the bottom of that layer of steamer. Everything was just a mess and considered a failure, though some people seemed to like the "brain-like" surface big rice cake. nevermind, it was quite funny wasn't it? :P
Point is, as the rice flour was bought with a Buy 1 Free 1 offer, we still had a LOT of it left. So when the itch-to-bake-or-make syndrome came, I decided to finish off as much of the rice flour as possible. And what can I say? Practice makes perfect! No lah, far from perfect yet but they are much better than before, special thanks to the aluminium foil cups left from mince pies and icing tarts...XD Environmental friendly, aren't we?
What are those things sticking around in the fa gaos? This is Caroline's version of fa gao with raisins, chocolate chips, almonds or cashew nuts! So unique you can't find it anywhere else :D
Gonna make apple crumble again tomorrow for lunch dessert! Or maybe banana crumble..or should I bake a cake...sweet tooth strikes once more uh oh! Self-control, come to me~~
